Espresso travels. A yolk whipped over Hanoi black, a pot buried in hot sand on a brass burner, and an hour of roasting on a charcoal brazier do not.

Fresh milk ran short during the French war, so a barman at the Metropole beat egg yolk with sugar and condensed milk instead and floated it on black coffee. The result is warm, thick and closer to tiramisu than to a cappuccino. Giang, the café his family still runs, serves it in a bowl of hot water so the foam keeps its heat to the last spoonful.

Coffee brewed in a pan of sand
The grind is finer than espresso, almost powder, and the cezve never touches a flame. It sits in a tray of hot sand that the brewer drags it through, raising the foam three times without letting it boil. Drink it slowly, stop before the silt, then turn the cup over on the saucer if you want someone to read what is left.

The three rounds
Green beans are roasted over charcoal in front of you, walked round so everyone gets the smoke, then pounded and brewed in a clay jebena. It is poured three times, abol, tona and baraka, each weaker than the last, and leaving after the first is the one rude thing you can do. Allow an hour, and eat the popcorn.
